Kidney Bean and Beet Hummus + Beet Margaritas

With the release of the new Barbie movie just around the corner, we asked ourselves what SIMPLi dishes would we bring to her cookout? We created two vibrant recipes inspired by Barbie's signature color: pink! Barbie has always been known for her colorful lifestyle, and we hope these Barbie-themed recipes bring that same sense of joy and playfulness to your next cookout. SIMPLi Kidney Bean & Roasted Beet Hummus Paired with a Snack Plate
Ingredients

1 cup SIMPLi Regenerative Organic Certified® Red Kidney Beans, cooked

1/2 cup roasted beets
-
2 tbsp cashews
-
2 tbsp sesame seeds, plus some for topping

2 tbsp lemon juice
-
1 tbsp water
-
4 cloves garlic
-
2 tbsp for topping
For the Snack Plate
Assorted fresh vegetables (carrots, cucumbers, peppers, etc.)
Fresh bread or crackers for dipping.
Instructions

In a food processor, combine the kidney beans, roasted beet, cashews, sesame seeds, lemon juice, garlic, water, and salt.

Blend the mixture until smooth and creamy, adding olive oil or lemon juice if needed for the desired consistency.

Transfer the hummus to a serving bowl and garnish with a drizzle of olive oil and a sprinkle of salt and sesame seeds.

Arrange the fresh vegetables and bread or crackers around the hummus on a snack plate.

Beet Margarita with SIMPLi Peruvian Pink Salt Rim
Ingredients

1 cup tequila
-
2 tbsp fresh lime juice

1 cup beet juice
-
2 tbsp Cointreau
-
3 tbsp simple syrup (equal parts water and sugar, dissolved)

SIMPLi Peruvian Pink Salt, for rimming the glass

Lime wedges, for garnish
Instructions

Rim a margarita glass with the pink salt by wetting the rim with a lime wedge and dipping it into a plate of salt.

In a cocktail shaker filled with ice, combine the tequila, lime juice, beet juice, Cointreau, and simple syrup.

Shake vigorously for about 15 seconds to chill the ingredients.

Strain the mixture into the prepared margarita glass, filled with ice.

Garnish with a lime wedge and serve immediately.
