Easy Quinoa Salad Recipe

This easy quinoa salad is delicious, refreshing, and healthy. It's made with fresh cucumber, tomato, green onion, cherry tomatoes, green onion, avocado, and topped off with our special 100% Extra Virgin Olive Oil dressing.

It is great for summer picnics, to bring to work, or even potlucks!

Store in a mason jar, or glass container in the fridge for several days to have as a side with protein or even the main meal. This bowl has flavor and texture and is substantial enough for lunch or dinner.

Ingredients

Salad

  • 2 cups cold cooked SIMPLi quinoa of your choice
  • 2 cups fresh spinach leaves (chopped)
  • 1 cup chopped cucumber
  • 1 cup cherry tomatoes
  • 1 cup green onions
  • 1 large avocado (pitted, peeled, and chopped)
  • Salt and black pepper (to taste)

Dressing

  • 1/4 cup SIMPLi 100% Extra Virgin Olive Oil
  • 1 clove minced garlic
  • 2 tablespoons lemon juice
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon pure maple syrup or honey
  • Salt and black pepper (to taste)

Directions

    Quinoa

    1. Rinse your quinoa with cold water in a strainer or sauce pan.

    2. Boil your water (2C of water per 1C of quinoa). When your water is at boiling temperature add your SIMPLi Quinoa of choice and let it simmer.

    3. Cook on low heat and cover for 12 minutes.

    4. When the water is evaporated, fluff with a fork and transfer to a large bowl to cool.

    Dressing

    1. In a small bowl or jar, whisk together SIMPLi 100% Extra Virgin Olive Oil, garlic, lemon juice, balsamic vinegar, maple syrup or honey, salt, and pepper.

    2. Set aside.

    Plating

    1. In a large bowl, combine combine SIMPLi Quinoa, spinach, cucumber, tomatoes, avocado, and green onions. 

    2. Drizzle salad with dressing and gently stir until salad is coated with the dressing.

    3. Season with salt and pepper, to taste.

    4. Serve and enjoy!
