Healthy Fried Quinoa Spring Rolls

Look no further for restaurant-quality spring rolls that are unbelievably easy to make, delicious, AND healthy! This quick recipe makes for a satisfying lunch, light dinner, orholiday party appetizer. Switch things up and make them vegan by adding our Regenerative Organic Certified (ROC) Quinoa to your filling. Spring rolls are a super light and crispy cousin of traditional egg rolls. The thing most people don't realize is that you can fill spring roll wrappers with anything you’d like! This recipe uses a vegetarian filling, but chicken, pork, or even shrimp would make for a great addition to the ingredients below.

    1. Boil 2 cups of water for the quinoa.

    2. While waiting for the water to boil, peel the carrots and cut in half lengthwise, then cut the halves in half again crosswise.

    3. Cut the cabbage into thin strips.

    4. Add 1 cup of SIMPLi Quinoa to boiling water, lower to a simmer, cover, and cook for 12 minutes or until absorbed.

    5. Heat a drizzle of SIMPLi EVOO Blend in a skillet and cook the bean sprouts, carrot, and cabbage for about 4–5 minutes.

    6. Fill a container with water. Soak rice paper wrappers in the water for 15 seconds.

    7. Remove from the wrappers from the water and lay them on a clean cloth to soak up excess water.

    8. Put some of the filling on one side of the wrapper. Fold the wrapper over the filling, fold over the sides, and roll up completely.

    9. Repeat the process with the remaining wrappers.

    10. Cover the bottom of your skillet with a layer of SIMPLi EVOO Blend

    11. Add wrapped rolls to the skillet and cook until browned, then flip and cook until the other side is browned.

    12. Serve these with your favorite dipping sauce and SIMPLi enjoy!

      Quick Tip: You can also cook them in the oven instead of frying them in a skillet.
