Vegan, Gluten-Free Holiday Quinoa Stuffing

Thanksgiving is right around the corner. If you're looking for an easy, healthy side dish, you've found it! This light, gluten-free, and vegan version of a traditional holiday stuffing incorporates our protein-packed quinoa and antioxidant-rich extra virgin olive oil for a flavorful, better-for-you side dish that’s sure to impress your guests.

SIMPLi Quinoa Stuffing

We used fluffy white quinoa in this version, but you can swap it for any other quinoa variety—red for extra nuttiness, or tri-color for variety.

Save yourself some time to spend with loved ones and make it a day or two ahead of time, then store it in the fridge until it’s ready to serve—just sprinkle some SIMPLi salt on top and prepare yourself to be the talk of the party!

Cooking Instructions

  • Add SIMPLi quinoa and broth to a large pot.

  • Bring to a boil, cover, then reduce to simmer for 10-15 minutes until all broth has been absorbed.

  • Remove from heat, fluff, and cool while you prepare the remaining ingredients.

  • Preheat the oven to 400ºF.

  • Toss diced sweet potatoes, shallot, and garlic in a large bowl.

  • Add spices, salt, and pepper, then drizzle with SIMPLi olive oil and toss to combine.

  • Transfer to a baking sheet and roast for 15-20 minutes, flipping halfway through.

  • Assemble stuffing by combining cooked quinoa, sweet potatoes, and pecans in a large mixing bowl.

  • Stir together and add apple cider vinegar, rosemary, and thyme.

  • Toss to combine.

  • Sprinkle extra SIMPLi salt on top for finishing.

  • Serve cold or reheat slightly.
