Amaranth Porridge With Sichuan Chili Crisp

iNGREDIENTS

SIMPLi Amaranth, dry
SIMPLi Olive Oil Blend
SIMPLi Peruvian Herb Salt
SIMPLi Peruvian Pink Salt
Fly By Jing Sichuan Chili Crisp
Fly By Jing Xtra Spicy Chili Crisp
Water
Vegetable stock
Eggs for poaching
White vinegar (for poaching)
Mushrooms, chopped
Yellow onions, chopped

2 eggs
1 tbsp
1/2 cup

iNSTRUCTIONS

  1. Prepare your SIMPLi Amaranth according to package instructions for porridge with SIMPLi Pink Salt. Begin by boiling the water in a small saucepan. Stir frequently to ensure the amaranth becomes tender and creamy.
  2. After the initial 20 minutes, uncover the saucepan and add the vegetable stock. Stir until it's well combined with the amaranth. Cover it again and let it simmer for another 10 minutes until the liquid is absorbed.
  3. While your amaranth is cooking away, it's time to build some flavor. In a separate pan, sauté the chopped onions in oil until they become translucent.
  4. Add the chopped mushrooms, SIMPLi Herb Salt, and Fly By Jing Xtra Spicy Chili Crisp. Sauté for 5-10 minutes until the mushrooms are crispy and infused with that irresistible spicy flavor.
  5. Once your onion and mushroom mix is ready, add it to the cooked amaranth and give it all a good stir. This is where the magic happens as the flavors meld together.
  6. In a small saucepan, poach the eggs one by one with a touch of white vinegar.
  7. In individual serving bowls, add a generous portion of the amaranth Top it off with the poached eggs and a final drizzle of Fly By Jing Sichuan Chili Crisp. If you're feeling especially daring, load up on that spicy goodness.
  8. Mix everything together and enjoy the creamy, dreamy explosion of flavors!
