INGREDIENTS

Dressing
  • 4 tablespoons lemon juice

INSTRUCTIONS

  • Rinse the amaranth and cook it according to package directions. Once it's cooked, fluff it with a fork and let it cool down. To save time, you can also rinse it under cold water.

  • Add the chopped parsley, red onions, cucumber, and pomegranate to the salad bowl. Then add the lemon juice and salt. Stir to combine.

  • Finally, add in the cooled amaranth and let it sit for 15 minutes if time allows. It allows the amaranth to soak up all the flavors and make it even more fragrant.
