  1. Cook SIMPLi White Quinoa. While quinoa is cooking, place the basil leaves and pine nuts into a food processor or blender and pulse several times.

  2. Add the garlic and cheese and pulse several times more. Scrape down the sides with a spatula.

  3. While pulsing, slowly add the olive oil, salt, and freshly ground black pepper to taste.

  4. In a bowl, mix the cooked SIMPLi Regenerative Organic Certified® Tri-Color Quinoa with the pesto and cherry tomatoes, then add more basil, cheese, and chicken or other protein if desired.

  5. Sprinkle more salt and pepper to finish.
