Ingredients
FOR THE BOWL

3/4 SIMPLi Regenerative Organic Certified® Tri-Color Quinoa cooked

1/2 cup of cherry tomatoes, sliced

1/4 cup parmesan or romano cheese, plus more for topping

4-6 large basil leaves
-
3.5 oz chicken or your favorite protein (optional)
FOR THE PESTO
-
fresh basil leaves, packed
-
1/3 pine nuts or walnuts
-
1 tbps of garlic, minced
-
1/8 freshly ground black pepper

Cook SIMPLi White Quinoa. While quinoa is cooking, place the basil leaves and pine nuts into a food processor or blender and pulse several times.

Add the garlic and cheese and pulse several times more. Scrape down the sides with a spatula.

While pulsing, slowly add the olive oil, salt, and freshly ground black pepper to taste.

In a bowl, mix the cooked SIMPLi Regenerative Organic Certified® Tri-Color Quinoa with the pesto and cherry tomatoes, then add more basil, cheese, and chicken or other protein if desired.

Sprinkle more salt and pepper to finish.
