      2. Coffee layer: whisk the chia seeds, espresso, coconut milk and maple syrup together in a bowl. Cover and place in the fridge to set.

      3. Vanilla layer: whisk the chia seeds, coconut milk, vanilla extract and maple syrup together in a bowl. Cover and place in the fridge to set.

      4. Assemble: remove the three layers of chia pudding from the fridge. If the chia pudding feels too thick, add an extra splash of coconut milk and mix it in. Grab a cup or a jar and layer each chia pudding in the cup starting with chocolate on the bottom, followed by coffee and vanilla on top. Optionally serve with a scoop of the solids from the coconut milk and a dusting of cocoa powder.
