  1. Cook your quinoa by following the directions on the packaging.

  2. Preheat your oven to 450 degrees.

  3. Wash and slice sweet potatoes into small cubes.

  4. Drizzle EVOO on the sweet potatoes to coat evenly.

  5. Cook the sweet potatoes for 40 minutes.

  6. Drizzle EVOO on the kale and massage into the leaves.

  7. Slice the cherry tomatoes.

  8. Assemble and enjoy your quinoa salad.
