Healthy Quinoa Nachos


INGREDIENTS

1 1/4 cup of SIMPLi Regenerative Organic Certified® White Quinoa

1 cup of water
-
1/2 cup of cherry tomatoes
-
2 fresh jalapeños
-
A handful of fresh cilantro
-
1/2 cup of cheese
-
1/3 cup of greek yogurt or sour cream
-
1/3 cup of salsa
-
1/3 cup of guacamole
-
1 tablespoon of SIMPLi Extra Virgin Olive Oil
-
1/2 teaspoon of chili powder
-
1/2 teaspoon of garlic powder
-
1/2 teaspoon of SIMPLi Peruvian Herb Salt
-
1/2 teaspoon of ground black pepper

Instructions
Quinoa Chips

Preheat oven to 400°F.

Place SIMPLi Regenerative Organic Certified® White Quinoa in a large skillet over medium heat. Toast until fragrant, about 2 minutes.

Place 1 cup of SIMPLi Regenerative Organic Certified® White Quinoa and all spices into a blender with a small splash of water and blend. Gradually add the rest of the water until a thick batter forms.

Lightly brush a rimmed baking sheet with SIMPLi Extra Virgin Olive Oil. Pour batter onto sheet. Spread batter out to 1/8-inch thick with a rubber spatula and sprinkle remaining quinoa over top. Cook for 5-10 minutes until edges of the dough are browned.

Take dough out of the oven and allow to cool. Once cool enough to handle, cut dough into desired shapes. Place dough back onto baking sheet and return to the oven for another 5-10 minutes until chips are browned.

Take out of the oven and let cool completely before breaking into small pieces.
Nachos
-
Chop cherry tomatoes in half
-
Cut fresh jalapeños into thin slices
-
Remove the stems from the cilantro
-
Spread quinoa chips on a plate in an even layer
-
Sprinkle cheese on top
-
Melt cheese
-
Add jalapeños, tomatoes, cilantro, and whichever toppings you like (guacamole, salsa, Greek yogurt/sour cream)
-
Serve and enjoy!
