Say hello to our new favorite chopped salad that just happens to feature two superfoods: kale and quinoa! This salad pops with complex flavors and textures— plus it is healthy, filling, and delicious.

The secret to making raw kale really tasty is to massage it, this tenderizes the kale, and breaks down its fibrous nature creating a really delicious dish.

    SIMPLi Kale Red Quinoa Salad

    Cooking Instructions

    1. Follow stovetop cooking instructions for 1 cup of SIMPLi Regenerative Organic Certified® Red Quinoa

    2. De-stem the kale, chop, and massage until you feel like the leaves start to loosen

    3. Chop celery and yellow pepper

    4. Shred the cabbage – either green or purple

    5. Slice the corn off the cob

    6. In a big bowl mix all the ingredients together and toss with the Apple Cider Vinaigrette

    7. Serve fresh or keep for meal prep throughout the week

    8. Optional: add additional apple cider vinegar for additional tang or add fresh blueberries for pops of creamy flavor
