Lupini beans, also referred to as choco, tarwi, and lupin, are a staple in pantries across the Mediterranean, Middle East, North Africa, and Latin America. They add high amounts of nitrogen to the soil they grow in and require little water, making them a resilient rotational crop in the regenerative organic ecosystem. We rotate our heirloom lupini beans with other regenerative organic crops like amaranth, quinoa, and chia. Unlike other lupini beans on the market, we took the extra step to pre-cook and dehydrate them to reduce cooking time and bitterness. They taste surprisingly nutty and have an almost addictingly savory taste. These powerhouse beans contain all nine amino acids, nearly double the protein as other beans, and very little starch or sugar, making them the perfect low-carb, high protein addition to your favorite meals.
