Red Lentil Hummus with Olive Oil Drizzle

A lighter, protein-packed twist on a classic, this red lentil hummus with an olive oil drizzle is smooth, nourishing, and full of feel-good flavor. Finished with fresh herbs, it’s perfect for everyday snacking, entertaining, or adding a wholesome touch to any meal.

Red Lentil Hummus with Olive Oil Drizzle

iNGREDIENTS

SIMPLi Regenerative Organic Certified® Red Lentils
Water or vegetable stock
Garlic
Tahini
Lemon Juice
SIMPLi Regenerative Organic Certified® Greek Extra Virgin Olive Oil
Ground cumin
Smoked paprika
Salt & pepper
Fresh parsley
1 cup
3 cups
2 cloves, peeled
3 tablespoons (about 1 lemon)
3 tablespoons, plus more for drizzle
½ teaspoon
½ teaspoon, plus more for garnish
to taste
for garnish (chopped)

iNSTRUCTIONS

Cook the Lentils: In a medium saucepan, combine rinsed red lentils, garlic cloves, and water (or stock). Bring to a boil, then reduce heat and simmer uncovered for 12–15 minutes, until lentils are tender but not mushy. Drain well and let cool slightly. 

Make the Hummus: In a food processor, blend the cooked lentils and garlic with tahini, lemon juice, olive oil, cumin, paprika, salt, and pepper. Process until smooth and creamy, adding a splash of water if needed to reach your desired consistency. Taste and adjust seasoning. 

Serve: Spoon hummus into a shallow bowl and use the back of a spoon to create swoops.
