White Quinoa & Pumpkin Granola with Alec’s Ice Cream

With pumpkin-oriented dishes taking over the culinary scene, we wanted to develop a creative fall dessert that both satisfied our sweet tooth and celebrated the Regenerative Organic movement. Ingredients
Granola

3 cups rolled oats

1 cup SIMPLi White Quinoa (uncooked)

1 cup sliced almonds
-
1 cup sunflower seeds
-
2 teaspoons SIMPLi Peruvian Pink Salt

½ cup pumpkin puree
-
½ cup honey
-
¼ brown sugar
-
1 tablespoon nutmeg

Chocolate Chocolate Chip

Tahitian Vanilla Bean

Salted Caramel Latte
-
Honey Blueberry Lavender

Instructions

Preheat the oven to 350 degrees.

Prepare the granola: mix together the oats, quinoa, almonds, sunflower seeds, and salt in a large bowl. Set aside.

In a separate bowl, mix together the pumpkin puree, olive oil, honey, sugar, and nutmeg.

Combine wet and dry ingredients in one large bowl and thoroughly mix.

Spread & flatten granola onto baking sheet in one even layer. Use 2 baking sheets if too cramped.

Bake the granola for 30-40 minutes rotating every 10 minutes until evenly browned.

Remove from the oven. Either let cool, or add warmed as a topping onto several scoops of Mint Chocolate Chip from Alec’s Ice Cream. Enjoy!
A delicious fall dessert with just the right balance of sweet & salty, this recipe celebrates all the things we look forward to about autumn as well as our beautiful planet.
