Chickpea Quinoa Salad

iNGREDIENTS

Salad

SIMPLi Regenerative Organic Certified Tri-Color Quinoa
SIMPLi Regenerative Organic Certified Chickpeas
Chopped red onion
Diced cucumber
Parsley

Dressing

SIMPLi Extra Virgin Olive Oil
SIMPLi Peruvian Herb Salt & ground black pepper
Lemon
Red wine vinegar
Chopped garlic
1 tbsp
to taste

1 tbsp
1 clove

iNSTRUCTIONS

  1. Cook SIMPLi Regenerative Organic Certified Tri-Color Quinoa and Regenerative Organic Certified Chickpeas according to package instructions. Once cooked, fluff with a fork and let cool to room temperature.
  2. In a large mixing bowl, combine the cooked SIMPLi Regenerative Organic Certified Tri-Color QuinoaRegenerative Organic Certified Chickpeas, chopped red onion, chopped red pepper, diced cucumber, minced garlic, and fresh parsley. Mix well to combine.
  3. In a small bowl, combine the SIMPLi Extra Virgin Olive Oil, lemon juice, vinegar, garlic, and SIMPLi Peruvian Herb Salt. Whisk until blended, then set aside.
  4. Add quinoa and chickpeas to the bowl with the other salad ingredients, and drizzle the dressing on top. Toss until the mixture is thoroughly combined. Season with black pepper, to taste, and add an extra pinch of salt if necessary. For the best flavor, let the salad rest for 5 to 10 minutes before serving.
