Instructions

  1. Heat a generous amount of extra virgin olive oil in a pot or Dutch oven. Cook the chorizo until it's beautifully browned, then transfer it to a bowl and set it aside.

  2. In the same pot, sauté the chopped onion in the olive oil and chorizo fat until it achieves a delightful golden-brown hue.

  3. Stir in the sofrito and add the fresh aroma of cilantro to the mix.

  4. Introduce black beans, sweet potato, butternut squash, and plantains to the pot, creating a vibrant and wholesome base.

  5. Once the ingredients have softened to perfection, reintroduce the cooked chorizo to infuse its rich flavors.

  6. Season the stew with a pinch of salt, allowing the ingredients to meld into a symphony of tastes. Let it simmer for 45 minutes, filling your kitchen with delightful aromas.

  7. To finish, garnish with a drizzle of olive oil and a sprinkle of fresh cilantro.
