Farro, Citrus & Arugula Salad

This Farro, Citrus & Arugula Salad is a celebration of freshness and flavor, bringing together nutrient-dense SIMPLi Regenerative Organic Certified Farro® with vibrant citrus, peppery arugula, and crisp fennel. A bright citrus-shallot vinaigrette ties it all together, creating a dish that’s zesty, crunchy, and subtly sweet.

Farro, Citrus & Arugula Salad

iNGREDIENTS

For the Salad

Chicken or vegetable stock (or water)
Cara cara orange
Grapefruit
Fresh arugula
Fennel bulb
Red onion
Raw shelled pistachios

½ toasted and chopped

For the Dressing

Fresh orange juice
Red wine vinegar
SIMPLi Greek Regenerative Organic Certified® Greek Extra Virgin Olive Oil
Shallot
Honey
Kosher salt & freshly ground black pepper

iNSTRUCTIONS

  1. Cook the Farro: Place the rinsed SIMPLi Regenerative Organic Certified® Farro in a medium pot with stock or water. Bring to a boil, then reduce heat and simmer for 25–30 minutes, until tender with a slight chew. Drain any excess liquid. Toss farro with 1 tablespoon of the vinaigrette and let cool slightly. 
  2. Prepare the Citrus: Cut the peel and pith from the cara cara orange, blood orange, and grapefruit. Working over a large bowl to catch the juices, cut between the membranes to release the citrus segments (supremes). Squeeze the remaining membranes to extract juice, reserving about 2 tablespoons for the dressing. Set fruit aside. 
  3. Make the Dressing: In a small bowl, whisk together the reserved orange juice, red wine vinegar, olive oil, shallot, and honey. Season with salt and pepper to taste. 
  4. Assemble the Salad: In a large mixing bowl, combine the cooled farro, arugula, fennel, and red onion. Add the dressing and toss well to coat. Gently fold in the citrus segments. 
  5. Serve: Transfer to a platter or bowl, top with toasted pistachios, and serve immediately.
