Sheet Pan Veggies with Chicken Sausage and Maple Dijon Tahini Dressing

A nourishing, flavor-forward twist on a weeknight favorite, this sheet pan chicken sausage dinner is as satisfying as it is simple. With caramelized sweet potatoes, crispy Brussels sprouts, and a creamy Maple Dijon Tahini drizzle, every bite delivers cozy comfort and balanced nutrition — perfect for meal prep, busy evenings, or effortless entertaining.

Sheet Pan Veggies with Chicken Sausage and Maple Dijon Tahini Dressing

iNGREDIENTS

Ingredients

SIMPLi Tricolored or White Quinoa
SIMPLi Spanish Extra Virgin Olive Oil
SIMPLi Peruvian Pink Salt
peeled and cubed sweet potatoes
Brussels sprouts, trimmed and halved
red onion, cut into chunks
fully cooked chicken sausage, sliced on a bias into ¼-inch pieces (sweet Italian or apple chicken sausage work well)
finely chopped fresh rosemary
smoked paprika
garlic powder
cracked black pepper
chopped Tuscan kale

Maple Dijon Tahini Dressing

SIMPLi Peruvian Pink Salt
tahini
maple syrup
dijon mustard
apple cider vinegar
garlic, minced
water
Freshly cracked black pepper, to taste
½ tsp
¼ cup
1 Tbsp
1 ½ Tbsp
2 Tbsp
1 clove
2-3 Tbsp

iNSTRUCTIONS

  1. Preheat oven to 425ºF.
  2. Combine sweet potatoes, Brussels sprouts, and red onion, on a large rimmed baking sheet.
  3. In a small bowl or jar, whisk together olive oil, spices and rosemary. Pour over the veggies, tossing well to coat. Place in the oven to roast for 15 minutes.
  4. After 15 minutes, add the sliced chicken sausage to the sheet pan. Toss everything together gently so sausage is coated in some oil and spices.
  5. Roast for another 15-20 minutes, tossing halfway, until sweet potatoes are tender and caramelized and the sausage is lightly browned but not dried out.
  6. While the veggies roast, place kale in a large bowl. Add 1-2 tsp olive oil and a pinch of salt. Use your hands to massage the kale for 1-2 minutes, until it darkens in color and softens in texture. Set aside.
  7. In a small bowl whisk together all Maple Dijon Tahini Dressing ingredients except the water. Slowly add water 1 Tbsp at a time, until smooth and creamy.
  8. To serve: Divide quinoa and massaged kale between bowls. Top with the roasted sausage and vegetable mixture. Drizzle generously with Maple Dijon Tahini Dressing. Enjoy!
