SIMPLi Regenerative Organic Certified® Gigante Beans
SIMPLi Olive Oil Blend
SIMPLi Peruvian Herb Salt, more to taste
SIMPLi Extra Virgin Olive Oil
Kettle & Fire Broth of your choice
Water
Fresh sourdough or your favorite bread
Whatever ingredients you want to cook the beans in (parmesan cheese rind, garlic, fresh herbs, onions, lemons)

iNSTRUCTIONS

  1. Start by soaking the gigante beans This not only reduces cooking time but also enhances the creaminess of the beans.
  2. Rinse the soaked beans and place them in a pot. Cover with water and bring to a gentle boil. Simmer until the beans are tender.
  3. Drizzle olive oil blend into a pot for a rich and flavorful base and heat on medium-low.
  4. Add your seasoning ingredients (halved red onion, rosemary, halved lemon, and 4 garlic cloves in our case) to the pot and sear until softened.
  5. Add Kettle & Fire bone broth (we used Turmeric Ginger) and 6 cups of water to the pot and bring to a boil.
  6. Add soaked and rinsed gigante beans to the pot, season with Peruvian Herb Salt, and reduce heat to a simmer.
  7. Let the beans simmer for about 1 hour or until beans are tender, allowing them to soak up the flavors of the broth.
  8. While the beans are cooking, drizzle EVOO into a pan, add bread slices, and sear on medium heat until golden brown.
  9. Once the gigante beans are tender and the broth is rich, turn off the heat and ladle the brothy beans into bowls.
  10. Pair this brothy bean dish with the crusty bread and enjoy
