Ingredients
FOR THE LOAF

1/4 cup SIMPLi Extra Virgin Olive Oil

1/2 tsp SIMPLi Peruvian Pink Salt

1/2 cup SIMPLi White Quinoa, cooked

1 1/2 tsp baking soda

1 1/2 cups all-purpose flour

1/2 tsp baking powder
-
2 tsp ground cinnamon
-
1/2 tsp ground nutmeg
-
1/4 tsp ground cloves
-
1 cup granulated sugar
-
2 large eggs
-
1 cup canned pumpkin puree
-
1/3 cup Greek yogurt
-
3 oz bittersweet chocolate, finely chopped
FOR THE GLAZE

¾ cups confectioner’s sugar, sifted, plus more as needed

1-2 tbsp hot water
Instructions

Cook SIMPLi White Quinoa according to package instructions.

Start by preheating your oven to 350°F. Grease and flour a 9x5-inch loaf pan.

In a medium-sized bowl, whisk together the all-purpose flour, baking soda, baking powder, SIMPLi Pink Salt, ground cinnamon, nutmeg, and ground cloves. Set this mixture aside.

In another large mixing bowl, combine SIMPLi Olive Oil and granulated sugar. Beat in the eggs, one at a time, ensuring each one is fully incorporated. Stir in the yogurt, pumpkin puree, and the cooked SIMPLi White Quinoa.

Gradually mix the dry ingredients into the wet mixture. Stir in ¾ of the chocolate shavings until combined. Pour the batter into the prepared loaf pan.

Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.

Allow the loaf to cool in the pan for about 20 minutes before transferring it to a wire rack to cool completely.

Whisk together the ingredients for the glaze until smooth.

Once cooled, drizzle the olive oil glaze on top, and sprinkle the remaining ¼ chocolate shavings and SIMPLi Pink Salt to finish. Slice and enjoy!
