Gigante Bean Dip with Crispy Sage

As the crisp fall season fills the air, we love gathering around the table with hearty, flavorful dishes that nourish the body and the soul – such as with this Gigante Bean Dip with Crispy Sage, a warm, inviting recipe that perfectly embodies the season’s spirit. This dip, with its creamy texture and earthy undertones from the SIMPLi Gigante Beans, is complemented by the subtle spice of SIMPLi Peruvian Spice Salt Blend and the crunch of crispy sage, adding an aromatic finish that feels like autumn in every bite.

Gigante Bean Dip with Crispy Sage

iNGREDIENTS

SIMPLi Regenerative Organic Certified® Gigante Beans
SIMPLi Olive Oil Blend
SIMPLi Extra Virgin Olive Oil
SIMPLi Peruvian Spice Salt Blend
Filtered water
Veggie broth
Red onion, diced 
Garlic cloves, minced 
Cracked black pepper
Lemon juice
Sprigs fresh sage
1 cup

iNSTRUCTIONS

  1. Add the gigante beans to a pot and cover with water. 
  2. Bring water to a boil then reduce to a simmer and cook beans for 45 - 60 minutes, topping water off as needed (for more tips and tricks on how to prep and cook dried beans, check out SIMPLi’s cooking guide). 
  3. Drain water out of beans and place in a bowl.  
  4. Sweat onions and garlic in olive oil blend on medium heat until translucent, but not browned. Start with the onions, then add garlic at the very end for just a few moments.  
  5. Add beans and broth, then season with Peruvian spice salt blend & pepper. Sauté beans for a few moments. Add another ½ tbsp of olive oil blend if needed.   
  6. Squeeze in lemon juice.  
  7. Remove from heat.  
  8. Puree beans and aromatics in a food processor or with an immersion blender until creamy.  
  9. In a shallow pan, heat the olive oil blend on medium-high heat.  
  10. Add sage leaves one by one, letting them fry for a few moments. Remove from oil once they are crispy but not brown, and place on a paper towel to try.  
  11. Plate puréed beans with a drizzle of extra virgin olive oil, pepper, and garnish with fried sage. Enjoy with fresh bread or crackers!
