Instructions

  1. Preheat the oven to 350 degrees.

  2. In a large bowl, whisk together the egg, almond butter, maple syrup, and molasses, beating until creamy.

  3. Add in oats, SIMPLi White Quinoa, baking powder, ginger, nutmeg, cinnamon, allspice, and SIMPLi Pink Salt and stir together until well combined.

  4. Drop about 2 tablespoons of dough onto the baking sheets until the dough is gone from the mixing bowl.

  5. Bake cookies on center rack for about 15 minutes or until the edges are golden brown. Remove from oven and transfer the cookies to a wire rack. Let cool completely.

  6. Prep the frosting: combine the powdered sugar with water & vanilla extract and mix thoroughly. The frosting should be relatively thick and creamy. If needed, add a bit more water to reach your desired consistency.

  7. Once the cookies are completely cool, spread the powdered sugar frosting on top of each cookie. Sprinkle with SIMPLi Pink Salt for an added hint of saltiness.

  8. Enjoy or store in the fridge and remove 5-10 minutes before serving.
