Spicy Harvest Bowl with Quinoa and Chickpeas

iNGREDIENTS

SIMPLi White Quinoa, cooked
SIMPLi Chickpeas, cooked
SIMPLi Olive Oil
SIMPLi Pink Salt
Fly by Jing's Chili Crisp Vinaigrette
Fresh cracked black pepper
White sweet potato, washed and cubed
Chopped kale, brussels sprouts, and cabbage
Optional toppings: Fresh parsley, an extra drizzle of vinaigrette

iNSTRUCTIONS

  1. Start by preheating your oven to 400°F.
  2. In a large bowl, toss the cubed white sweet potatoes with 2 tablespoons of SIMPLi Olive Oil. Season with SIMPLi Pink Salt, black pepper, and thyme. Spread them out on a baking sheet and roast in the oven for about 25-30 minutes or until they're tender and slightly caramelized.
  3. While the sweet potatoes are roasting, drizzle 1 tbsp SIMPLi Olive Oil and SIMPLi Pink Salt over the cooked SIMPLi White Quinoa on a baking sheet pan, then add to the oven with the sweet potatoes and roast until crispy and golden, about 15 minutes.
  4. On a separate baking sheet, spread out the d SIMPLi Chickpeas. Drizzle a little SIMPLi Olive Oil  and a sprinkle of SIMPLi Pink Salt over them, and roast for about 15-20 minutes or until they're crispy.
  5. Once the quinoa is done crisping, remove from the baking sheet and set aside.
  6. Add the chopped kale, brussels sprouts, and cabbage to the baking sheet, season with SIMPLi Olive Oil  and a sprinkle of SIMPLi Pink Salt, and mix to combine. Then roast in the oven nd roast for about 15-20 minutes or until slightly browned and crispy.
  7. Assemble your harvest bowl by layering the roasted kale, brussels sprouts, and cabbage, crispy SIMPLi White Quinoa, roasted white sweet potatoes, and crunchy  SIMPLi Chickpeas.
  8. Drizzle Fly by Jing's Chili Crisp Vinaigrette over the bowl for a delightful kick of spice and flavor.
  9. If you like, top with fresh parsley and a bit more vinaigrette for an extra burst of heat. Serve and enjoy right away!
