Ingredients

1 1/2 cups SIMPLi Regenerative Organic Certified Chickpeas, cooked

1/4 cup peanut butter or cashew butter

1/4 cup flour

3 tbsp maple syrup

2 tsp SIMPLi Pink Salt

1 tsp vanilla extract

4 oz chocolate
Instructions

Cook chickpeas according to package instructions.

In a food processor, combine the cooked chickpeas, nut butter, flour, maple syrup, 1 tsp salt, and vanilla extract. Pulse until a smooth dough forms. Chill the dough in the fridge for 15 minutes.

Line a tray with parchment paper. Scoop portions of dough and roll them into balls using a cookie scoop or tablespoon measure. Place the tray in the freezer to firm up.

Melt the dark chocolate. Allow the chocolate to cool slightly.

Remove the dough balls from the freezer. Using two forks, dip each ball into the melted chocolate, ensuring complete coating. Let excess chocolate drip off, then place the coated balls on a baking sheet lined with parchment paper.

Once all the dough balls are coated, sprinkle with the remaining salt and refrigerate the tray for a few minutes to allow the chocolate to harden. Then, savor the guilt-free decadence!
