Instructions

  1. Prepare the SIMPLi Lupini Beans according to package instructions (for more tips on how to prepare Lupini beans, be sure to read our beans cooking guide). It is best to leave them soaking overnight. Once the beans are cooked, proceed to the next steps.

  2. Let your pastry sheets thaw for 10-15 minutes, or according to package instructions.

  3. Add the beans, onion, SIMPLi 100% Extra Virgin Olive Oil, tomato paste, SIMPLi Peruvian Spice Salt Blend, garlic, and parsley to a food processor. Process until the mixture is fully combined.

  4. Add mixture to a large bowl and mix in the nutritional yeast and cheese.

  5. Roll out your puff pastry dough on a clean and lightly floured surface. Cut each sheet into 3 strips as shown in the video.

  6. Spoon the Lupini Bean mixture into each strip ensuring an even distribution along the length. Gently roll the pastry over the filling, starting from one end and rolling towards the other, creating a compact and neat roll.Gently flatten with your hand. Brush the rolls with the egg wash and garnish with sesame seeds. Cut each of the rolls into 3-4 pieces.

  7. Place each piece carefully on a lined baking sheet.

  8. Bake for 20-25 minutes at 360 F. or until they start to look golden brown.

  9. To make the dip, combine mayo and harissa hot chili pepper paste

  10. Assemble on a board with the dip and enjoy!
