This deeply satisfying, flavor-packed bowl brings together SIMPLi Gigante Beans and broccolini, for a nourishing meal that’s simple to make and perfect for spring. 

Brothy Beans and Greens by Sustainable Sabs

iNGREDIENTS

SIMPLi Gigante Beans
SIMPLi Olive Oil Blend
Bean Broth (from cooking or vegetable broth)
Nutritional Yeast
Lemon, Squeezed
Miso Paste
Dried Thyme
Shallot, Diced
Broccolini, Chopped
Salt and Pepper
Chili Flakes (Optional)
Toasted and Buttered Sourdough
Drizzle of finishing oil (try infused garlic oil!)

4 stalks

2–4 slices
To taste

iNSTRUCTIONS

  1. Soak SIMPLi Gigante Beans overnight (8+ hours). Drain and rinse, then simmer in a pot with fresh water, a splash of oil, salt to taste, and 2 bay leaves until tender. Reserve cooking liquid (bean broth). 
  2. In a large skillet, heat cooking oil over low-medium heat. Add diced shallots and sauté until lightly golden and fragrant. Meanwhile, toast your sourdough slices. 
  3. Stir in the cooked beans and reserved bean broth. Bring to a simmer, then mix in nutritional yeast, lemon juice, miso paste, thyme, chili flakes (if using), salt, and pepper. 
  4. Toss in broccolini and cook for 2–3 minutes until tender but still vibrant. 
  5. Pour into a bowl, drizzle with finishing oil (try field garlic infused oil for extra flavor!), and serve with warm sourdough for dipping.
