Instructions

  1. Cook chickpeas according to package instructions.

  2. Preheat your oven to 400F. In a mixing bowl, combine the cooked chickpeas with olive oil, and salt. Ensure the chickpeas are evenly coated.

  3. Transfer the seasoned chickpeas onto a baking sheet and roast for 20-25 minutes until crispy yet tender inside.

  4. While the chickpeas roast, prepare the creamy feta mixture. In a food processor, blend the feta, yogurt, garlic, and lemon zest until smooth and creamy. Taste and adjust seasoning as needed.

  5. To serve, spread the whipped feta onto a plate, creating a smooth bed for the roasted chickpeas. Gently place the crispy chickpeas on top of the feta. Drizzle with an extra touch of SIMPLi's olive oil for added richness and flavor. Scoop up with freshly baked bread or crackers.
