Summer Bean Salsa


Ingredients

1/2 cup SIMPLi Extra Virgin Olive Oil

1.5 cup SIMPLi Regenerative Organic Certified® Red Kidney Beans, cooked

1.5 cup SIMPLi Regenerative Organic Certified® Black Beans, cooked

1/4 cup red wine vinegar

1garlic clove, minced
-
1 teaspoon SIMPLi Peruvian Spice Salt Blend

1 teaspoon ground cumin
-
1 teaspoon chili powder
-
1/4 teaspoon pepper
-
1-1/2 cups fresh corn
-
3 green onions, sliced
-
1/2 cup red onions, chopped

1 small sweet red pepper, chopped

1/4 cup minced fresh cilantro
Instructions

In a large bowl, combine the SIMPLi black beans, SIMPLi kidney beans, corn kernels, red onion, green onion, red bell pepper, and fresh cilantro leaves. Toss gently to mix.

In a separate small bowl, whisk together the SIMPLi extra virgin olive oil, garlic, red wine vinegar, and SIMPLi Peruvian spice salt blend.

Pour the dressing over the bean mixture and toss gently to ensure all ingredients are well coated. The vibrant colors and enticing aromas will make your mouth water.

Cover the bowl and refrigerate the salad for at least 1 hour to allow the flavors to meld together.
