Spiced Quinoa & Apple Parfait

We don’t know about you, but we’re tired of waking up to boring breakfasts – so we decided to spice up our morning routine with this Spiced White Quinoa & Apple Parfait!

Full of cozy, autumnal flavors and just the right amount of sweetness, this dish is basically apple pie in yogurt form. And with a combination of fluffy SIMPLi Regenerative Organic Certified White Quinoa and rich Greek yogurt, this parfait is loaded with protein, making it the perfect dish to jumpstart your morning!

  1. Combine chopped apple, brown sugar, 1/4 tablespoon cinnamon, 1/4 teaspoon nutmeg and 1/4 teaspoon salt in an oven safe dish. Roast apples until soft and caramelized for about 15-20 minutes.

  2. Combine quinoa with remaining cinnamon, nutmeg, and salt. Cook according to directions on package.

  3. When apples and quinoa have cooled, layer in a glass with Greek yogurt. If desired, mix yogurt with cinnamon and honey for topping. Enjoy!
