Ingredients

3 tablespoons SIMPLi Extra Virgin Olive Oil

1 large yellow onion, chopped

2 celery stalks, chopped

2 large carrots, chopped

2 tbps SIMPLi Peruvian Pink Salt

4 garlic cloves, minced
-
4 oz kale, torn or chopped
-
2 1/4 cup of crushed tomatoes or tomato sauce (28 oz can, minus 1 cup)

1 bag of SIMPLi Regenerative Organic Certified® Gigante Beans

8 oz mozzarella cheese, grated or torn
-
1/3 cup grated parmesan cheese
-
Parsley for garnish

Pepper for taste
Instructions

Prepare & cook SIMPLi Gigante Beans using your preferred method (refer to our cooking guide for reference).

Preheat oven to 475 degrees.

In a large Creuset, Dutch oven, or other bake-safe dish, heat the olive oil on medium high heat on the stovetop. Add the chopped onion, celery, carrots. Season with salt and pepper. Sauté the vegetables until they are brown, about 10 minutes.

Add the minced garlic. Cook for about 2 more minutes.

Add the kale and mix. Sauté until the kale has collapsed, about 2 minutes.

Add the tomatoes or tomato sauce and stir until well combined. Bring to a simmer for about 5 minutes.

Add in the cooked beans and stir until well combined. Let simmer for about 10 minutes. Taste and adjust seasonings as desired.

Evenly sprinkle mozzarella cheese and parmesan cheese over the dish.

Bake for 10 – 15 minutes in the oven, or until cheese has brown on top.

Sprinkle with fresh parsley and other seasonings (we recommend red pepper flakes, salt, and oregano).

Let stand and cool for about 5-10 minutes before serving.
