Slow Cooker Refried Black Bean Tacos

With the school season in full swing, these easy-to-make, fiber-filled black bean tacos are a delicious recipe that the whole family will enjoy! 

Slow Cooker Refried Black Bean Tacos

iNGREDIENTS

SIMPLi Regenerative Organic Certified® Black Beans (dried)
SIMPLi Extra Virgin Olive Oil
Corn tortillas
Ground beef
Taco seasoning
Mexican blend shredded cheese
Salsa
Sour cream
¼ cup
1 tbsp
2
¼ lbs
½ tbsp
¼ cup
2 tbsp
1 tbsp

iNSTRUCTIONS

  1. Add the SIMPLi black beans to the slow cooker. Add 2 cups of water for every 1/4 cup of beans to the slow cooker. Season the beans with a pinch of salt & a generous drizzle of olive oil. Cover & turn the slow cooker on high for 6-8 hours or until the beans are fully cooked. 
  2. Heat a drizzle of olive oil in a frying pan on medium-high heat. Add the cooked beans & mash the beans. Cook for 1-2 min. 
  3. Add the ground beef & taco seasoning. Break up the beef & brown the meat & beans for 5-6 min. Remove the beans & meat mixture from the pan & set aside.  
  4. Wipe out the pan & add another drizzle of olive oil. Add the tortillas to the pan. Add shredded cheese to one half of each tortilla. Top with the beef & bean mixture, then add the remaining shredded cheese. Close up each tortilla and flatten with your hands or a spatula. Cook for 3-4 min on each side on medium heat. 
  5. Serve the tortillas with sour cream & salsa. Top with fresh cilantro if you have any. Enjoy!
