Quinoa Arancini Bites with Peruvian Spiced Eggplant Chia Dip

Let’s be honest – sometimes Super Bowl party snacks can be a bit predictable each year. Which is why we’ve decided to elevate our snacking game this year with these easy to make, homemade Quinoa Arancini Bites paired alongside a Peruvian Spiced Eggplant Chia Dip!

Quinoa Arancini Bites with Peruvian Spiced Eggplant Chia Dip

iNGREDIENTS

Quinoa Arancini Bites

SIMPLi Regenerative Organic Certified® White Quinoa, cooked
SIMPLi Herb Salt Blend
SIMPLi Peruvian Pink Salt
SIMPLi Extra Virgin Olive Oil Blend (or enough to cover frying the arancini balls)
Breadcrumbs
Eggs
Flour
Mozzarella as needed

Peruvian Spiced Eggplant Chia Dip

SIMPLi Chia Seeds
SIMPLi Extra Virgin Olive Oil (plus more for serving)
SIMPLi Peruvian Spice Salt (plus more for serving)
Gochujang sauce
Tomato paste
Medium eggplant, roasted and skin removed

2 tsp
1 tsp
1 tbsp

iNSTRUCTIONS

Quinoa Arancini Bites 

  1. Combine and whisk egg, flour, breadcrumbs and cooked SIMPLi White Quinoa in a bowl until sticky batter forms. Using hands to properly mix is recommended, but not necessary. Add whatever seasoning you wish; this is your time to get creative! We love using our SIMPLi Herb Salt Blend for this batter.
  2. Grab chunks of the batter and flatten it in your hand. Add Mozzarella (or whatever filling your heart desires!). In the center, wrap the batter around the filling and shape it into a ball. The more batter you use, the bigger the bite size.
  3. Once all balls are formed, store them in the fridge for 20-30 mins to solidify them and keep them in shape when cooking. Then fry in SIMPLi Extra Virgin Olive Oil Blend until golden brown (2-4 mins). You can also bake them as a healthier option.
  4. Enjoy with your favorite dip (we loved pairing it with our Peruvian Spiced Eggplant Chia Dip – see recipe below!)

Peruvian Spiced Eggplant Chia Dip

  1. Put all ingredients together in a food processor or a blender. Blend together for 1 minute until smooth and creamy.
  2. Serve in a bowl with a drizzle of olive oil and a sprinkle of salt.
