Spiced Lamb Chops with Vinegary Peppers

Spiced Lamb Chops with Vinegary Peppers

iNGREDIENTS

Lamb

SIMPLi Peruvian Spice Salt Blend
SIMPLi Olive Oil Blend
Lamb rib chops, sliced into individual chops
Red wine vinegar
Sweet peppers
Fresno peppers, thinly sliced
Garlic cloves, thinly sliced
to taste

Yogurt Sauce

SIMPLi Extra Virgin Olive Oil
Full-fat Greek yogurt
Cilantro, minced
Diamond crystal kosher salt
2 tbsp
2 cups
½ cup
¼ tsp

iNSTRUCTIONS

  1. Season lamb chops generously with SIMPLi Peruvian Spice Salt Blend on all sides and let them come to room temperature for about 30 minutes.  
  2. While the lamb comes to temperature, make the yogurt sauce by combining all the sauce ingredients in a medium bowl. 
  3. Heat a skillet over medium-high heat with enough SIMPLi Olive Oil Blend to coat the bottom of the pan. Sear the lamb chops in batches, cooking for 4 minutes on the first side and 3 minutes on the second or until an internal temperature of 145 F has been reached.  
  4. Reduce heat to medium and deglaze the skillet with the red wine vinegar, scraping up any browned bits that have formed on the bottom. Add the peppers and garlic to the pan. Sauté until the peppers are soft and lightly browned, about 10 minutes. 
  5. To serve, swoosh the yogurt sauce on a platter with the back of a spoon, place the lamb chops on top, all facing the same direction, spoon the sauteed peppers over the lamb, and finish with a drizzle of SIMPLi Extra Virgin Olive Oil

This recipe is full of bold flavors that layer on each other to make for a magical meal. The lamb chops are coated in the SIMPLi Peruvian Spice Salt Blend, which has a perfect balance of pepper, cumin, garlic, and salt (all flavors go really well on a seared lamb!). Then, the pan with the leftover SIMPLi Olive Oil Blend and rendered lamb fat gets deglazed with red wine vinegar, a delicious contrast to the fatty flavors that have built up. Sweet and spicy peppers and thinly sliced garlic are added to the pan, creating the perfect topping for the spiced lamb. Everything goes on top of a refreshing and effortless cilantro yogurt sauce. The lamb chops act as the ideal serving vehicle, scooping a little yogurt sauce, looping on the vinegary peppers, all the flavors making their way to your mouth for the perfect bite.
