  • 1 bag SIMPLi Regenerative Organic Certified® Gigante Beans

  • 1 cup (dry) SIMPLi Regenerative Organic Certified® Amaranth

  • 1 can coconut cream

  • 2 tbsp vegan butter

  • 1 bell pepper

  • 1/2 onion (about 1 cup)

  • 1 cup chopped tomato

  • 3 tbsp tomato paste

  • 1/2 tbsp minced ginger

  • 1 jalapeno

  • 4 cloves of garlic, chopped

  • 1 tbsp red curry paste

  • 1/2 tsp paprika

  • 2 tsp turmeric

  • 1/2 tsp cayenne pepper (optional)

  • 1 tsp curry powder (more or less to taste)

  • Salt and pepper to taste

  • Optional: 1 tbsp sriracha coconut aminos

  • Fresh cilantro

  • Coconut yogurt drizzle (combine yogurt with salt water)











  1. Prepare the Amaranth according to package instructions. Set aside once ready.

  2. Presoak the Gigante Beans overnight and then cook them according to package instructions. If limited to time, fill up a pot with water and let it boil. Add the beans once the water is boiling and let them cook for 2 - 3 hours on medium to high heat. Add more water as needed.

  3. Heat up a pan with a tablespoon of butter. Add the garlic and onion with salt and pepper. Let it cook for 2 - 3 minutes and then add in the bell pepper and jalapeno.

  4. After about 2 minutes, add the chopped tomato, tomato paste, and curry paste. Mix until combined.

  5. You can now add the ginger, all seasoning, and coconut cream. Mix it all together.

  6. Now it's time to add in the drained Gigante Beans. Place on low heat and let it simmer so the sauce thickens. You can do this for about 5 - 10 minutes, checking it in between.

  7. Plate the meal with Amaranth and garnish with cilantro and coconut yogurt. Enjoy!
