A bit about Rosalia and the recipe:

I’m Rosalia, a food enthusiast with a passion for bringing different cultures together. I’ve studied Industrial Design, focusing on CMF (Color Material Design), and I worked in the tech industry for a couple of years. I started sharing my homemade recipes on social media in 2020 and became a full-time content creator in 2021. I grew up cooking with my mom and grandma. We cooked and baked a lot for Persian New Year, and 30 years later, I still do the same. INSTRUCTIONS

Dressing

  1. Finely chop the garlic.

  2. Then, whisk the lemon juice, olive oil, minced garlic, Greek yogurt, tahini, sumac, and Peruvian Herb Salt Blend until thoroughly combined. You can also use a handheld frother to make a bit creamier.

  3. Let the dressing sit in the fridge to marinate while you prep the salad.

Salad

  1. Cook the SIMPLi chickpeas and quinoa according to the package.

  2. Finely mince the dill, parsley, and mint. Set aside in a large bowl.

  3. Next, dice the cucumbers, tomatoes, bell pepper, radish, and onions. Add to the bowl with the herbs and mix.

  4. Pour the dressing over the salad and gently toss to coat.

  5. Add in the cooked chickpeas and quinoa and mix once more.

  6. Stuff a warm pita with the salad and enjoy!

Hummus

  1. Cook the SIMPLi chickpeas and Gigante beans according to the package.

  2. In a food processor or blender, blend the cooked chickpeas and Gigante beans with the garlic cloves, olive oil, Greek yogurt, tahini, lemon zest, lemon juice, and salt. Blend until creamy – if you like your hummus a bit creamier, add an ice cube or more olive oil.

  3. Pair with your tabbouleh salad and pita bread and enjoy!
