Lupini Beans: A Protein Powerhouse

Lupini beans, also known as lupin, lupine, choco, or tarwi, have been consumed for centuries in Mediterranean and Latin American cuisines. These legumes are not only delicious with a savory, slightly nutty flavor and silky texture, but are also incredibly nutritious. With nearly double the protein content of many other legumes, Lupini beans are an excellent choice for those looking to boost their protein intake. In fact, just one cup of cooked Lupini beans contains approximately 26 grams of protein, making them a fantastic plant-based protein source for vegetarians and vegans.

Ingredients

Instructions

  1. Preheat your oven to 450°F and line a baking sheet with parchment paper for easy cleanup.

  2. Start by rinsing the dried Lupini beans thoroughly under cold water. This step helps prepare the beans for roasting.

  3. Once rinsed, transfer the Lupini beans to the prepared baking sheet. Drizzle 3 tablespoons of olive oil over the beans, ensuring they are evenly coated.

  4. Now it's time to add the flavor! Choose between SIMPLi's Peruvian Herb Salt Blend or Peruvian Spice Salt Blend, depending on your preference. Use 1 1/2 teaspoons of either blend and sprinkle it over the beans. The Peruvian Herb Salt Blend offers a balanced and aromatic taste, while the Peruvian Spice Salt Blend adds a touch of heat and complexity.

  5. Mix the Lupini beans, olive oil, and seasoning thoroughly, ensuring each bean is coated with a delicious blend of flavors.

  6. Place the baking sheet in the preheated oven and let the Lupini beans roast for approximately 15 minutes or until golden brown. Take them out of the oven and stir to ensure even browning. Put them back in the oven if not golden brown in color.

  7. After approximately 10 more minutes, remove the baking sheet from the oven when the beans have turned a lovely golden brown color and have developed a satisfying crunch.

  8. Allow the roasted Lupini beans to cool for a few minutes before serving. This will enhance the flavors and ensure a delightful eating experience.

  9. Enjoy as a nutritious and addictive snack on their own or incorporate them into your favorite recipes—they make a fantastic addition to salads, soups, or even as a topping for roasted vegetables.

Hi Mary – Lizzie here from the SIMPLi team! To clarify, these DO NOT need to be soaked before baking in the oven. Our beans are dehydrated and pre-cooked so you can skip the soaking process to cook them more quickly. If you would like to soak them before cooking, you absolutely can. This will make them cook even more quickly. Don’t hesitate to reach out to info@eatsimpli.com with further questions.

Hi Rebecca – Lizzie here from the SIMPLi team! Sorry you’re having trouble with the cooking time on these. Cooking may vary depending on a number of factors like altitude, oven temperature, and more. Try turning your heat down to 425F or 400F, and checking the beans halfway through cooking. Looking forward to hearing if that works! If not, please reach out to info@eatsimpli.com and we’ll get you additional help.

I’ve tried this twice using just the dried beans rinsed and patted dry. First batch burned by 15 minutes. Second batch half burned at 7 minutes. HELP!!

Please clarify- for this recipe you do not soak the lupini beans? You roast them from dried and rinsed only?
    Thank you for clarification
