Grilled Steak Salad with Charred Scallion Lime Dressing

Summer is the perfect time to fire up the grill (or stove) and embrace seasonal dishes and fresh ingredients – such as with this grilled steak salad with a charred scallion lime dressing!

Grilled Steak Salad with Charred Scallion Lime Dressing

INGREDIENTS

Steak Salad

SIMPLi Peruvian Spice Salt Blend
SIMPLi Extra Virgin Olive Oil Blend, for searing steak
NY Strip Steak
Leafy greens
Cherry tomatoes, halved
Red onion, thinly sliced
Cob of corn, charred
Corn nuts

Charred Scallion Lime Dressing

SIMPLi Extra Virgin Olive Oil Blend
SIMPLi Peruvian Pink Salt
Sour cream
White wine vinegar
Lime juice
Bunch cilantro, with stems
Scallions, charred
Garlic cloves
Jalapeno, charred (keep pith & seeds for more heat)
Pepper

INSTRUCTIONS

  1. Season the steak with 2 tsp of SIMPLi Peruvian Spice Salt Blend & let sit on the counter for 30 minutes or until it comes to room temperature.
  2. While the steak sits, make the charred scallion lime dressing. In a cast iron over medium-high heat, char scallions & a jalapeno.
  3. To a blender or food processor, add charred scallions & jalapeno, cilantro, garlic cloves, sour cream, olive oil, white wine vinegar, juice of a lime, SIMPLi Peruvian Pink Salt & pepper. You can also use an immersion blender to make the dressing. Dressing will last in the fridge for up to 1 week.
  4. Next, prepare your salad ingredients. Wash & chop tomatoes, red onion & greens.
  5. Remove the kernels off one corn cob & char the kernels in a cast iron over medium-high heat until they have some color. Set them aside.
  6. Keep the cast iron skillet on the stove & lower the heat to medium. Add in 2 tbsp of SIMPLi Extra Virgin Olive Oil Blend & immediately add in the seasoned steak. Cook until desired temperature, flipping halfway through for an even sear.
  7. Once the steak is done cooking, let it rest for 5 minutes, or longer if it’s a thick cut. A general rule of thumb is to let the steak sit for 5 minutes per inch.
  8. Once the steak has rested, slice into strips & assemble salad.
  9. Dress salad with charred scallion lime dressing & enjoy!
